On our previous trip to Kuching the deckie gutted the fish immediately after we caught them, it tasted better than those bigger sized Ang Kuey, i think it all depends on how fast you process the fish, if u dump it straight into the ice box right after it's caught the taste becomes horrible with some ammonia aftertaste. Just sharing thou as we try not to waste the fish that we caught.
